This summer, I spent a month working as a server at Danì Maison. I thought I knew fine dining before that—turns out, I didn’t. The restaurant ran like a perfectly choreographed ballet, but with an intensity and level of detail that I had never witnessed before.

I had eaten lasagna a million times before. I thought I knew what good lasagna tasted like. Then I took a bite, and suddenly, everything I knew felt wrong. The flavors just hit the rights spots, it was rich but light, delicious but elegant, simply amazing.
